This will come as no surprise to anyone who has renovated anything, but our two week renovation project has stretched into three. But that is ok because I have brand new butcher block counter tops and I am head over heels in LOVE with them.


We laid the kitchen and living room floor last night and today are putting in a new kitchen table and rebuilding a seating bench and a wall. It’s coming together, albeit slower than we had originally planned for.
Thankfully, our friends, who’s land we are parked on, are happy to let us stay for another week and we do not have to travel this weekend with projects left undone.
So, fingers crossed that I will have plenty of after photos for you next week. Until then, Spring is upon us (see the beautiful purple flowers outside my kitchen windows???) and here are 8 recipes to help us welcome it with open arms. 🌸








Pork Carnitas ~ Instant Pot or Slow Cooker. I have made this Carnitas Recipe more times than I could possibly count for more occasions than I could possibly remember. The meat is crispy on the outside, super flavorful, fall-off-the bone tender, and couldn't be easier to prepare.
Easy Berry Cobbler - make with fresh or frozen berries. This Berry Cobbler takes about 10 minutes to throw together and THIS is your reward: Plump, juicy berries that are just the right amount of sweet, tart, and saucy baked under a buttery, chewy, sugar cookie topping.
French Crullers. These are one of the easiest kinds of homemade doughnuts you can make! Start to finish, crullers take about an hour and require a small handful of ingredients - milk, butter, sugar, salt, eggs, and flour.
Sheet Pan Greek Meatballs with Tzatziki Sauce. This sheet pan recipe is a no-mess, quick-to-make, flavor-packed meal guaranteed to transport you to the Mediterranean on any random weeknight like it’s no big deal.
Chicken Enchiladas. As is often true of the things I love the most, the brilliance of those enchiladas was in their simplicity. These super easy enchiladas take about 15 minutes to make and 20 minutes to bake. It’s also easy to make as many or as few as you like.
Slow-roasted Pulled Pork Tacos with Green Slaw. This recipe comes to us from the talented
and trust me friends, you want to add these tacos to your to-make list immediately, especially if you are hosting any kind of gathering in April.Jicama and Papaya Salad. The salad at Clandestino was bright, colorful, and refreshing with an interesting mix of flavors and textures. In other words, to my mind, it was exactly what a salad should be. It’s also the kind of salad that makes just as much sense as a main dish or as a side dish.
Creamy Miso Potato Salad with Roasted Cabbage. This creamy potato salad also happens to be vegan thanks to pureed cashews which stand in beautifully for traditional mayo.
