Just discovered your Substack and immediately felt like I was in the right place - recipes, renovations, and a little bit of what is happening with my life energy. I’m writing from rural France (with a lot more foie gras and a lot less plumbing knowledge), and this hit home in the best way. Subscribed - and already hungry for more!
WOW! What a difference those countertops make. I am totally inspired to make some upgrades to our RV, too. Ken is currently in the process of installing our tankless water heater. It just arrived and I am SO excited. I can't wait to see all of your after pics!
I haven't made those crullers in a while and as I was writing this post I was wondering why??? They are really so easy and so good when eaten warm and fresh.
Crullers are one of the easiest doughnuts to make and they are so good! I couldn't believe how easy they were the first time I made them. Totally doable as a weekend morning project.
Your new countertops look gorgeous. I bet you ARE really happy and pleased about them. Good for you! The recipes look mouth watering good. I was just getting ready to make out a menu for this coming week. This is meal plan made easy. Yay!! Thank you, Rebecca.
Let me know what you end up making! I love, love, love my new countertops. And, I am typing this from my new kitchen table which we also made from the same butcher block! All our major projects are complete and it looks better than I had imagined. I can't wait to share more photos with you!
Rebecca, I managed to make the sheet pan meatballs one night for my husband and myself. It was soooo good! We ate the leftovers the next night. Then I made the chicken enchiladas with Mexican rice and avocado salad for a family with 4 teenagers. It was a huge success, over the top. Those teens thought they were in 7th heaven. Tonight I'm making the pork carnitas with guacamole and mixed berry cobbler for desert. Right now my kitchen smells so wonderful. Can't wait.

OMG Shell!!! This comment just made my whole week! How amazing to be featured in cooking the stacks! I'd suggest Betty's tacos for sure. They are incredible! I made the chicken enchiladas last night for dinner with friends and they were a huge hit! And, we are making the miso potato salad later this week. I wish we were closer so we could eat it all together!

Also, tomorrow and Thursday's menu is the braised pork chops and chicken schnitzel. Looking forward to a happy palate. 🤗😋
We made braised pork chops last week! And, if my taste buds were in charge of my life, I’d eat Chicken Schnitzel every week.
