I was first introduced to
in a virtual blogger group last year after she reached out to tell me that her and her husband are also RVers. We messaged a few times and I could tell right away that if we ever had the opportunity to meet in person, we’d have a great time.After planning our 2025 travel itinerary and remembering that she lives in Texas, I reached out to tell her that we’d be in San Antonio for a couple of weeks. After learning that Holly and her husband Ken live 6 hours from San Antonio, I figured a face-to-face meeting was off the table.
So, imagine my delight when they packed up their camper and drove across the state just to have dinner with us!
The four of us spent a delightful evening drinking margaritas, and stuffing ourselves silly with loaded shrimp nachos, Texas chili, and sopapilla cheesecake.
Holly created the menu and then cooked our entire meal from my kitchen and as I write this I am in AWE that a perfect stranger would happily agree to drive across the state to spend an evening in my kitchen cooking for us!
And here we are going to take a slight detour…
We’ve been living in an RV and traveling full time for nearly 5 years now and I am meticulous about planning our travels and making all our campground reservations far in advance. So, imagine our surprise when we arrived at our Louisiana campground last weekend to learn that I accidentally made the reservation for the first two weeks in March not the last two weeks in February. 🤦🏻♀️
We crammed ourselves into a space that is way too small for our size RV because it was all they had available.
The campers next to us were impressed with Steve’s superhero-like skill in manipulating a 43-foot trailer into such a tiny spot and came over to offer us a drink. We learned that they were just two weeks into their own full time RV adventure, and the four of us ended up drinking wine and bourbon sours and talking late into the night.
And that is really one of the greatest things about this life. We never know what’s around the corner and sometimes it’s new friends.
As I mentioned a couple of weeks ago, Steve and I are the kind of people who tend towards keeping to ourselves. AND YET, without even trying, and perhaps even against our best (worst?) intentions, we have an ever growing list of lifelong friends from all across the country.
There are good people everywhere and some of them will invite you into their home for a drink before they even know your name and others will drive 6 hours to come inside your kitchen and cook you dinner.
I don’t know about you, but this reminder about the generosity of humans is something I don’t ever want to loose sight of.
Ok. Where were we?
The menu!
Here’s what Holly made for us and you’ll find every single one of the recipes below as well as chili cheese burritos, homemade flour tortillas, and honey cornbread muffins.



San Antonio Style Loaded Shrimp Nachos with Pico de Gallo and Candied Jalapeños: Spicy seared gulf coast shrimp wrapped in a creamy chipotle pepper sauce and piled onto chips with tons of cheese, fresh pico de gallo and Holly’s homemade candied jalapeños. Steve and I are now obsessed with these. OBSESSED, I tell you.
Texas Chili: Something I did not know until this night is that if you’re from Texas, you do NOT put beans in your chili. They are very serious about this. Holly’s recipe is packed with beef and spicy chili flavor that’s layered into a thick stew and it’s even better the next day. I know this for a fact because we got to keep the leftovers. I spooned the chili into homemade flour tortillas, added some cheese and wrapped it all up into chili cheese burritos. You’ll find all those recipes below including one for homemade flour tortillas.
Sopapilla Cheesecake: This recipe is for everyone but it’s ESPECIALLY for all of you non-bakers who also occasionally want the satisfaction of a homemade dessert. This recipe layers crescent roll dough with a creamy cheesecake filling, a sweet cinnamon sugar mixture, and a final drizzle of honey for that classic sopapilla flavor. It takes minutes to prepare and is a guaranteed crowd-pleaser.



Also there were margaritas. Holly received this giant bottle of tequila as a white elephant gift this past Christmas and brought it along. We made a pretty good dent in it, but also, I think I could make margaritas for every Lost Supper Club for the rest of the year and not run out. 😂
