No Recipe Required dishes are more of a formula than a recipe. They are designed to be thrown together with whatever ingredients you like with one thing swapped out for something else, increased, or reduced as you like.

I think this is how many of us cook anyway. Sure, there are times when we pull up a new recipe and follow it to the letter. But the rest of the time, we are just improvising, getting something on the table as quickly as we can because we’re hungry.

The situation in which I think many of us find ourselves is making the same things over and over again because it’s what we have and what we know. We’d like to try new things more often, but the planning and execution always seems to fall to the bottom of the to-do list.

If you relate, I hope this book inspires you to try something new using ingredients that you (and your family) enjoy, without a lot of planning and with minimal time spent in the kitchen.

Many of the recipes in this book do not have ingredient amounts. If you are a diligent recipe follower, don’t let this stress you out. Each one is designed to be easily adaptable to the number of people you’re cooking for and your personal preferences.

Baked Chicken with Tomatoes, for example, can be made with nothing more than chicken, tomatoes and a few dried and/or fresh herbs. But, if you want to throw in a handful of green chilies, olives, or capers, please do, adding as much or as little as you like.

When a recipe does include ingredient amounts, they are meant to be taken lightly, as more of a reference than anything else. No need to be precise.

Finally, many of the recipes include some serving suggestions and links to other recipes I think you’ll enjoy.
