I totally resonate with the in between days, or just the “days as life goes on” because as much as I enjoy the holiday time, I can’t eat all of the indulgent holiday food all month long. Also, I don’t celebrate Christmas and it can feel a little lonely.
I’m writing a piece right now and I wanted it to have more of the ring of this piece, but it had a mind of its own, as writing usually does. So, I ended up just telling stories about my mother-in-law and husband whom I indirectly found the recipe through.
I appreciate you sharing this idea because you’ve given language to what I was thinking about— “the in-between days.”
I also love this reminder to slow down, and enjoy a nourishing and easy meal (or several).
And all of your resources are absolutely fantastic!
Thank you so much Leslie! We are enjoying a lot more down time this holiday season than in years past, and I LOVE it. We aren't trying to pack quite as much in, and therefore have a lot more in between days. It feels cozy, and quiet, and calm. And, I think, will help us enjoy the celebratory days a bit more. :-) I'm off to seek out the post you mention here!
Rebecca, I'm so happy to have inspired this gorgeous meal! I love a recipe that can be adapted to whatever mood you're in or however many people at the table. The in-between days are very real, and we have quite a few coming up. In Spain, the holidays stretch all the way to January 6, when we celebrate Three Kings Day, so we'll be doing lots of in-between meals soon!
Honestly, it's a marathon. Christmas lunches/dinners with friends and work colleagues start now, the Christmas decorations around the city will probably be put up in the next week, and then starting on the 24th, we've got big family get-togethers (dinner on the 24th, lunch on the 25th, dinner on the 31st, lunch on the 1st,), where we then have a five-day "break" so to speak, before we celebrate Three Kings Day. So... yeah. It's long!
I feel like the season starts earlier and earlier here. Marathon is the right word for it. Holiday decorations are starting to appear in October, which is, in my opinion, WAY too early. I honestly love all the holiday lights and decorations and fun. I'd just like to keep it contained to one month out of the year. 😂 Enjoy your marathon!!!
Oh I love the thought of in-between days and how really those can be just as important as the holidays that flank them on either side. Such a lovely read, my friend! And I can’t wait for that cocktail Live with Robin! 🥂
Thank you so much! The LIVE with Robin is sure to be a blast! Also, I'm making two of your mocktails for Thanksgiving! The Rosemary Lime Ricky and Palma!
It's funny, because I was just thinking about how the "in-between" days might be the most important of all. And here you are, with all the recipes we need for these "in-between" times, which really, are The Times. ❤️
And p.s. Those beef bowls with that yogurt sauce are brilliant! ✨
Ahhh, thank you so much for the mention! And gosh, these are beautiful photographs and recipes, as always! I really like your concept around the in-between days. You are right, there is all this focus on the main event, but you still want to feed yourself something good on the other days! Those crispy bean tacos have my name on them.
My goodness this is a good piece Rebecca, I not only enjoy reading your posts but, your gorgeous food and photography - chef’s kiss!!! The coconut cream pie 😍- I may have to make that today.

Interesting... when do you feel like the holiday season begins in Spain?

Oh wow!!! Honored that you are doing that - the rosemary one has become my favorite this fall.
What a wonderful post! Thank you so much for the mention!
This is absolutely glorious, start to finish (errrr, soup to nuts?)
Thank you for the mention but more importantly, thank you for these beautiful recipes!
