Pad Thai coleslaw makes so much sense. I like to dabble in the raw food world and there are various versions of a raw pad Thai floating around the internet. But I realize that a lot of people are not into raw food recipes at all. So calling this cole slaw is a great way to get a wider group of people to enjoy it.

Rebecca, I can't thank you enough for this opportunity to share. I love your adjustments to the recipes. Frittata- great idea. And I likely added just as much cheese as you. That is one measurement that goes not by eye, not by handful, but by how much we have on hand, haha.

I am absolutely going to make those recipes this summer on the boat. Steve especially loved the hummus pizza. And it was so easy! I was thinking the same basic combo might make a good wrap or sandwich. Thank you for such a great idea!

I love the sound of the pad thai coleslaw. Will definitely be making that next time I'm on my boat, which will be July in the Bahamas so the oven is 100% not getting turned on!
