Chicken Pot Pie for Two + Foolproof Pie Crust

Two bonus recipes just for members of The Lost Supper club

I was a young mom. Steve and I met in high school and married soon after graduation at the tender ages of 18 and 19. Our son came along less than two weeks before I turned 21.

Believe it or not, when we first got married, I was determined to not cook. Cooking didn’t appeal to me for several reasons, not the least of which was not wanting to set the expectation that cooking was “my job”.

Ha! We all know how that worked out. 😂

After our son was born, I thought, “Someone is going to have to feed this kid.” So, I cracked open the Betty Crocker Cookbook, a wedding gift that had been sitting in a box since the wedding. That cookbook was a staple in my mom’s kitchen, so it seemed like a good place to start. I made Betty’s Sweet and Sour Chicken, Lasagna, and Chicken Pot Pie.

The sweet and sour chicken did not make a repeat performance and I’ve since learned to make much better lasagna. But the chicken pot pie became an instant family favorite.

The recipe called for frozen veggies and frozen pie crust. I kept the frozen veggies but I wanted to make the pastry from scratch.

After several failed attempts, I came across a recipe for “Foolproof Pie Crust” and jotted it down on a recipe card. (This was the olden days. Before the internet and computers. We had to write stuff. On paper. Some of you remember.)

Foolproof Pie Crust became my go-to pie crust recipe and the only crust I used to make chicken pot pie.

Our son was a super fan of the meal, requesting it for every birthday (I once made 8 pies for one party!). At around the age of 16, I taught him how to make it and it became one of his specialties.

After the kids moved out, I stopped making pot pie as often. One entire pie is a lot for two people.

But recently I got a set of these adorable 6-inch pie plates, and chicken pot pie has made a very welcome comeback.

The recipe below for Foolproof pie crust and Chicken pot pie will make enough for two 6-inch double crust chicken pot pies. I’ll leave it up to you to decide whether one 6-inch pie is one serving or two. Steve and I typically share one pie and save the second one for the next day. But you’ll find no judgement here if you decide to keep an entire pie to yourself.
