I hope you have a wonderful time sailing! I also have a fondness for scallops and aspire to perfect my cooking technique for them. Mine often tend to become rubbery, so I am searching for that ideal cooking method.
I hope you try this recipe! It’s truly one of our favorites and the scallops come out perfectly every time. The key is to turn off the heat and baste them with hot butter after you flip them over.
My gosh those scallops!!! This would be a dream dish for my husband so I’m gonna have to make it soon. And I feel like you do regarding FB and IG. It’s just not fun like it used to be and I find myself drained by it.
I have some nduja to use before we head on holiday, so I might melt it in some butter to have with this roasted corn and scallops. Thanks for the idea, and have a great sailing holiday.
How did your corn and scallops come out, Joanne??? We got back from our sailing trip last night and we had such a wonderful time. It feels a little bit strange to be back on land! :-)
Thank you so much Shell! We got back last night and we had such a great time. It feels a little bit strange to be back on land… I actually still feel like we’re on the water. It feels like the RV is gently bobbing along in the water. :-)
That is truly one of our favorite dishes. And my daughter Anne, who took the photographs, scored some decadently thick scallops for that photo shoot! 😋
Those scallops, though...YUM!!

So pleased you had a lovely time! Haha, I know that feeling, where you lay in bed and feel like you are still rocking!
